How to make Mushroom pulao?
Ingredients
Basmati rice 1 cup
Oil 2 tablespoons
Fennel seeds/sompu/saunf -1tbsp
Cumin seeds/jeerakam 1 tbsp
Cardamom 3, krambu 2 ,bay leaf 1, black stone flower 1 piece,mace 1, onion 1large sliced thinly, ginger garlic paste 1 tablespoon, green chillies 4, coriander leaves 1/4 cup chopped , mint leaves 1/4 cup chopped , coconut milk 1cup ,water 1/2 cup ,salt to taste.
Method
Watch the soak rice for 30 minutes. Heat oil in your pan and add in all whole spices. Let them sizzle for a minute. Add onions and saute till golden brown. Add in green Chillies and saute for a min. Add in mushrooms and toss well in oil till it is cooked and got nice colour. Add in coriander, mint leaves and mix well. Now add in rice and toss well in the the oil. Now add in coconut milk and water mix well. Season with salt. Colour with a lid and simmer to the the lowest possible. Cook for 15 minutes. Turn off of the the heat and fluff the rice with a fork. Cover with a lid and let it sit for 15 mins. Now serve the Mushrooms pulav.
