how to make chicken dum biryani?
Ingredients
Marinating the chicken: 2 kg chicken , lemon juice 2 tbsp, yogurt 2 cups, turmeric powder 3/4 spoon, cumin powder 2tbsp, coriander powder 2 tbsp, garam masala powder 1 tbsp, green chilies -5, chopped mint leaves 1 cup, chopped coriander leaves 1 cup, gingar, garlic paste 3tbsp and salt and fried onions.
Oil, ghee, biryani whole spice s , saffron milk, chapati dough.
To marinate the chicken: Take the chiken in a bowl add lemon juice and little bit of salt. Rub into the pieces and set it aside for 10 minutes next for the the main marination inaya a ball add two spoons coriander powder, 1 tbsp garam masala and mix well finally add 5 Chopped green chillies 1 cup chopped coriander leaves. Mix everything together. To the chicken pieces, add 3tbsp ginger garlic paste and fried onions and the entire yogurt Meritnation. Let it marination for 3 hours minimum.
To took the rice
Take 1 kg of basmati rice in a bowl. Pure water let it soak in water for 30 minutes
Take a pot of water. Let it boil. Add the soaked rice. To this add the whole spices ,bay leaf Cook till the rice is about 3/4 th done. Strain the water before the rice is completely cooked.
To cook the biryani:
Take a pot ad gi and little oil and whole spices bay leaf star anise ,chinnamon ,cloves and cardamom. To this taw add the marinated chicken pieces and cook
It 5 minutes. Heat the the and place the pot on top of it. To the chicken ad mint leaves and coriander leaves. Add the cooked rice and AD saffron milk garnish it with fried onions add mint leaves and coriander leaves. Cover the pot with a plate and seal it with chapati dough ,to make sure the steam doesn't go out. Use something heavy to place on top of the plate. Let it cook for 30 minutes. Remove the chapati dough seal. Mix the rice well serve it on a plate with raitha.
